CALIDAD - AVE - MICROBIOLOGICO - CRITERIO
Establece parámetros microbiológicos para productos avícolas crudos y cocidos, enfriados,
congelados y rebozados. Criterios obligatorios para patógenos. Criterios recomendatorios para no
patógenos.
RESOLUCION EX SENASA N° 198/95
BUENOS ARIES, 20 de setiembre de 1995
VISTO que el capítulo 7 numeral 7.1.1. del Decreto 4238/68 autoriza al SERVICIO NACIONAL DE
SANIDAD ANIMAL, para establecer límites y/o criterios de tolerancia microbiológico, y
CONSIDERANDO:
Que la Resolución n° 57 (Resolución n° 3 de fecha 11 de enero de 1995) del Grupo Mercado
Común (MERCOSUR), fija los principios generales para el establecimiento de criterios y patrones
microbiológicos para alimentos.
Que es necesario actualizar los criterios microbiológicos para productos avícolas vigentes a la
fecha.
Que se han realizado los estudios microbiológicos y estadísticos que dan solvencia a los mismos.
Que es misión del SERVICIO NACIONAL DE SANIDAD ANIMAL, proteger la salud del
consumidor y uniformar criterios para las prácticas de comercio.
Que el artículo 11 de la Ley 23.877, acuerda facultades al suscripto para resolver sobre el
particular.
Por ello,
EL ADMINISTRADOR GENERAL DEL
SERVICIO NACIONAL DE SANIDAD ANIMAL
RESUELVE:
ARTICULO 1°.- Impleméntese en establecimientos faenadores y procesadores de aves los
criterios microbiológicos para: pollo seco, pollo húmedo, pollo trozado, pollo congelado rebozado,
pollo congelado, crudo en planta, que figuran como anexos I, II, III, IV y V respectivamente.
ARTICULO 2°.- DEFINICIONES (59/93 Mercosur 3/95 C.A.A.:
CRITERIO OBLIGATORIO (CO) se refiere a microorganismos considerados patógenos y/o sus
marcadores de importancia en Salud Pública y de acuerdo con la clase de alimento.
CRITERIO RECOMENDATORIO (CR): son los criterios relativos a la evaluación del proceso
tecnológico utilizado para la obtención de un producto terminado.
ARTICULO 3°.- Se considerará criterio obligatorio el referido a Salmonella. Se considerará criterio
recomendatorio el referido a los demás microorganismos mencionados en los anexos.
ARTICULO 4°.- Pase sucesivamente a las GERENCIAS de LABORATORIOS, APROBACION DE
PRODUCTOS ALIMENTICIOS Y FARMACOLOGICOS (COORDINACION ALIMENTOS) y de
INSPECCION DE PRODUCTOS ALIMENTICIOS, a sus efectos.
ARTICULO 5°.- Regístrese, comuníquese y archívese.

Se modifica el numeral 27.1.2. del Reglamento Inspección de Productos, Subproductos y Derivados de Origen Animal, aprobado por Decreto n° 4238/68, por: "El certificado sanitario será firmado por un Inspector Veterinario o por el Profesional Veterinario que el Servicio designe para tal fin. Excepcionalmente podrá autorizarse, en forma individual y expresa a ayudantes de veterinarios a firmar los certificados. Esta autorización, no puede ser extendida nunca para la firma de certificados que amparan las mercaderías destinadas para la exportación".

Establece los mecanismos necesarios para certificar oficialmente la sanidad de los establecimientos productores de cabras y ovejas respecto a Brucelosis (Brucella Melitensis) tanto para el mercado interno como para la exportación de ganado y productos lácteos.
En la Comisión Local de la zona se registrarán las inscripciones de los establecimientos para la erradicación voluntaria del ganado caprino y ovino (Brucella Melitensis). Se eliminará serológicamente todos los animales por Rosa de Bengala como Prueba tamiz.
